for what" table, common LogQL queries, trace exploration workflow,
log→trace correlation via traceId links, and a signal summary table

- Fix stale DEPLOYMENT.md env var table: OTEL_EXPORTER_OTLP_ENDPOINT
now documents port 4318 (HTTP) not 4317 (gRPC); add the three new
env vars wired in this PR (OTEL_LOGS_EXPORTER, OTEL_METRICS_EXPORTER,
MANAGEMENT_METRICS_TAGS_APPLICATION) with their rationale
- Fix stale obs-tempo service description (port 4318, not 4317)

Removes scaffolding pages from initial Paraglide setup that were never
navigated to in production. Shrinks the measured coverage surface and
removes dead code from the production bundle. CLAUDE.md route tables
updated to drop the demo/ entry.

ExcelService was deleted in fa60c5be. Both the root and backend

Controller was directly calling personRepository.save() for person creation.
Extracted into PersonService.createPerson() to enforce Controller → Service → Repository layering.
Also documented the layering rules in CLAUDE.md.

Missing closing braces caused Spring to inject the literal placeholder
string instead of resolving the property, silently ignoring any
app.admin.username / app.admin.password env-var overrides.
