Marcel 6a0fd25662 fix(ocr): persist scriptType override via DocumentService transaction ...

OcrService.startOcr() was setting scriptType on a detached entity,
silently losing the mutation. Added DocumentService.updateScriptType()
with @Transactional to persist the change properly.
